So... talkin on the chatbox to L and MZ and having no idea how I got started on this, I found 3 different recipes for Butter Beer, or Butterbeer, however you wish to spell it. The most apropo recipe seems to be this one found on CDKitchen:
Ingredients:
1 pint vanilla ice cream (softened)
1/2 stick butter (softened)
1/3 cup brown sugar
2 teaspoons cinnamon
1 teaspoon grated nutmeg
1/4 teaspoon ground cloves
1 quart apple cider
Directions:
Cream butter, sugar and spices together. Beat in the vanilla ice cream. Re-freeze the mixture. Scoop out the frozen mixture into a glass. Pour hot Apple cider over the ice cream mixture.
Optional: add an ounce of rum for an adult treat.
This recipe from CDKitchen for Butter Beer serves/makes 1.5 quarts

A couple others call for butterscotch in the recipe and were found on two different ... you guessed it ... Harry Potter fan sites:
From: MuggleNet - Madame Rosmerta's Magical Recipes
Ingredients:
* 1 cup (8 oz) club soda or cream soda
* ½ cup (4 oz) butterscotch syrup (ice cream topping)
* ½ tablespoon butter
Directions:
Step 1: Measure butterscotch and butter into a 2 cup (16 oz) glass. Microwave on high for 1 to 1½ minutes, or until syrup is bubbly and butter is completely incorporated.
Step 2: Stir and cool for 30 seconds, then slowly mix in club soda. Mixture will fizz quite a bit.
Step 3: Serve in two coffee mugs or small glasses; a perfectly warm Hogwarts treat for two!

From: Yumsugar - Happy Hour: Butterbeer (Hot & Cold)
Hot Butterbeer
From Elanor Isolda at The Leaky Lounge
1 litre cream soda
2-3 tbsp butter
2-3 tbsp brown sugar
200ml single cream
4 or 5 Werther's Originals
1. Put the cream soda in a pan to boil.
2. Melt the butter and sugar together until the sugar has dissolved.
3. Pour the butter and sugar mixture into the pan of boiling cream soda (make sure the soda is boiling, or the butter and sugar will solidify).
4. Add the cream.
5. Add the Werther's Originals and stir continuously until they melt.
6. Serve hot.
7. You can also add a couple of shots of Butterscotch Schnapps for that extra kick!
Cold Butterbeer
From Britta Blvd
1 cup butterscotch schnapps
7 cups cream soda (almost one 2 liter bottle)
Carefully mix just before serving, adding the schnapps to the soda then stirring gently to mix well, or the fizz will dissipate too soon.
Serve in beer mugs and enjoy!
